A good Sunday breakfast

What does a vegan have for a nice Sunday breakfast? How do you replace your eggs? Well, its certainly not Sunday today but I did find out. I'm completely stuffed and satisfied as I just made vegan scrambled eggs.

Before you can't imagine anything more disgusting than faking an egg, look at this beautiful sandwich. It is as good as it looks.

If you were worried how to survive your vegan Easter, here's the recipe, thanks to my brother Michael:


Ingredients
Onion - 1
Garlic - 2 toes
Olive oil - 2 tbsp
Tomato - 1
Cumin - 2 tsp
Paprika - 1 tsp
Dried thyme - 1 tsp
Turmeric - 0.5 tsp
Tofu - 200 gram
Black salt powder - 0.5 tsp   (find this in a toko or online)
Pepper & Salt - to taste
Lime - 0.5
Avocado - 0.5 (optional)

Preparation
Drain the tofu from its water.
Cut the onion and garlic finely, fry in some olive oil.
Add all the herbs, tomatoes and crumb the tofu in your hands. Stir it all for a few minutes.
Then add the lime juice.

Serve with half an avocado and bread.
